Recipe ideas using chia seeds!

Chia seeds are increasingly present in our kitchens, and are known for their many benefits. Consumed by the ancient civilizations of South America and brought to Europe several years ago, these seeds are renowned for their nutritional value.

Why not talk about the different recipes we can make using these seeds? Whether for breakfast, dessert or a main course, you'll find some interesting ideas below!

A few details about chia seeds

Chia seeds are mainly grown in Mexico. They may be gray or beige in color, but this has no impact on their nutritional quality. It's only the taste that changes. Brown chia seeds, for example, are characterized by their stronger taste.

Recipe ideas 

Recipe 1: Chia Pudding

Rest time: from 1 hour to one night

Ingredients for one person :

  • 250 ml animal or vegetable milk of your choice
  • 25g chia seeds
  • 2 tbsp sweetener of your choice : mielsugar, maple syrup, coconut flower syrup, ...

Preparation

  • Start by pouring the ingredients into a bowl.
  • Stir every 10 minutes for half an hour.
  • Then chill the bowl for 1 hour or overnight. The chia seeds will soak up the liquid and swell. This will give the pudding its texture.

How to use it

  • In a savoury verrine with guacamole and smoked salmon
  • On its own with fresh fruit, in purée, chunks, compote or coulis
  • Customize the recipe with coconut milk, almond milk or cinnamon.

Sweet recipes

Chia seeds are mainly used in sweet recipes. If there are tastes you don't like, don't hesitate to combine them with other fruits, flavours or spices.

You can also vary animal and vegetable milks to suit your recipes: ewe's milk, coconut milk, cow's milk, hazelnut milk, almond milk, etc.

Recipe n°2: Chocolate, hazelnut and chia seed cream

Rest time: 1h or overnight

Ingredients for 2 people

  • 250 ml animal or vegetable milk
  • 25g de cocoa raw unsweetened
  • 30g chia seeds
  • 25g sweetener of your choice : mielsugar, maple syrup, coconut flower syrup
  • 4 tbsp hazelnuts, consecrated or whole

Preparation

  • Crush the hazelnuts.
  • Place all the ingredients in a saucepan (except the chopped hazelnuts) and heat over low heat.
  • Stir evenly with a wooden spoon to prevent the mixture from sticking to the pan.
  • Il faut noter que le cacao doit s'incorporer au lait et le mélange doit résulter homogène. 
  • When the mixture is smooth, remove from the heat and add the chopped hazelnuts.
  • Finally, pour the cream into individual ramekins. Chill for at least 2 hours before serving.

Recipe 3: Autumn overnight porridge: chia seeds, dried fruit, oats, apple and cinnamon

  • Cooking time: 2 minutes
  • Rest period: 1 night

Ingredients for 1 person

  • 250 ml vegetable or animal milk of your choice (hazelnut or almond)
  • 50 g of oatmeal
  • 1 tbsp chia seeds
  • 1 tbsp dried fruit of your choice (goji berries, raisins, cranberries)
  • 1/2 apple
  • 1/2 c.à.c. de cinnamon

Preparation

  • Versez le lait dans une casserole et portez-le à l'ébullition avec de​ la cannelle
  • Pour the rolled oats and chia seeds into a bowl. Top with hot cinnamon milk.
  • Then cover the bowl, place in a cool place and leave overnight.
  • The next morning, cut the apple into pieces.
  • To finish, add the dried fruit and apple pieces.

Recipe 4: Oat, pecan and seed cereal bar

  • Cooking time: 30 minutes
  • You'll need the oven

Ingredients for 4 to 6 cereal bars 

  • 100 g of oatmeal
  • 50 g oat bran
  • 1 tbsp chia seeds
  • About 15 pecans
  • 20 g cranberries
  • 30g coconut oil
  • 5 tbsp honey

Preparation

  1. Start by preheating the oven to 170°C.
  2. Chop the pecans coarsely and mix with the rolled oats, oat bran, cranberries and chia seeds.
  3. Heat the coconut oil and honey in a saucepan over medium heat.
  4. Once boiling, remove from heat and add to the "seeds/oatmeal and cranberries" mixture.
  5. Place the two sheets of baking paper on a baking tray and spread out the mixture.
  6. Make sure the mixture is well compacted and holds together.
  7. Bake at 170°C for 30 minutes.
  8. When the mixture is cooked, let it cool completely.
  9. Finally, cut the bars to the desired size. Store in an airtight tin.

Astuces :

  • You can also melt chocolate in a bain-marie for added flavor. Once the bars have cooled and been cut, you'll need to dip them in the melted chocolate. Leave them in a cool place for 1 hour, then store them in an airtight box and in a cool place afterwards.
  • A financial mould can also be used to shape and bake cereal bars.

Recipe n°5: Nice cream banana-chocolate

  • 750 ml animal or vegetable milk of your choice
  • 2 frozen bananas (sliced)
  • 2 tbsp. peanut butter
  • 2 tbsp. cocoa powder
  • 1 tbsp chia seeds
  • Toppings of your choice: peanut butter, fresh banana, oilseeds, granola, noix.

Preparation:

  • Blend all the ingredients together and pour into bowls.
  • Finally, add your topping(s).

Recipe 6: Red fruit smoothie bowl

  • Tools required: blender
  • Option: you can choose any fruit you like, as long as you keep the total quantity (200g).

Ingredients for two smoothies

  • 50 g strawberries
  • 50 g raspberries
  • 50 g blueberries
  • 50 g blackberries
  • 1 tbsp chia seeds
  • 2 tbsp. yogurt, cottage cheese... of your choice
  • 1 banane

Preparation:

  • Start by washing and draining the fruit.
  • Peel the banana and chop roughly.
  • You can then blend the banana, yoghurt and red fruit.
  • Finally, pour the mixture into a glass and sprinkle with chia seeds.
