A few details about hulled buckwheat
The Kasha" or "Kacha" hulled buckwheatis hulled buckwheat in toasted grains, sometimes crushed but in this case whole. These small, reddish-brown grains have a pronounced flavor, require very little cooking and can be used in the same way as buckwheat groats .
Kasha goes very well with legumes or offal, game, stuffings, and also gives a pleasant mix of flavors when cooked with rice (add it towards the end of cooking if it's wholegrain rice not pre-cooked).
Roasted hulled buckwheat can also be used to make Sobacha, a traditional Japanese health drink that can be enjoyed at any time of day, hot or cold. Sobacha is rich in minerals, fiber and rutin (a flavonoid good for blood circulation, for example), and is reputed to reduce high blood pressure and cholesterol.

Advice on using hulled buckwheat
Wash buckwheat, cover with cold water and cook over low heat for 20-30 minutes.
Sobacha is prepared in the same way as tea: infuse 1 teaspoon of roasted buckwheat seeds in a cup of hot water for 5 to 10 minutes (with or without a sweet touch of your choice: honey, agave syrup, etc.).
Precautions for use with hulled buckwheat
- May contain traces of gluten, mustard, almonds, hazelnuts, cashew nuts, sesame and soy.
- Store in a cool, dark place (temperature below 20°C), tightly closed.
