The killer taste: glutamate or umami

Receptors specific to umami substances

The taste buds or taste buds (between 7500 and 12000) are left on the surface of the tongue. They allow to detect the 4 basic tastes: acid, bitter, sweet and salty. There does not seem to be a specialized area for the detection of this fifth taste. The taste buds would all be able to perceive umami, as they appear to have receptors specific to the perception of glutamates. The perceptions of the 4 fundamental tastes are transmitted to the brain through the gustatory nerves by transiting through synapses. This does not seem to be the case of umami receptors which transmit the information of this taste directly to the brain without the intermediary of synapses... This prevents the mechanisms of "controls" and "feedback" which exist during the "normal" neuronal path of another information whether it is gustatory or of other origins.

Synthetic molecules, a lure for our brain

This synthetic molecule is therefore a lure for the brain. It deceives our perception of taste and satiety. The inhibition of the feeling of satiety and the presence of this toxic molecule in almost all industrial foods mean that the quantities absorbed are enormous. This excitotoxin causes a real explosion of certain neurons, because the gustatory stimulation is much too intense. In 1969, MGS was banned in baby food, but no one drew attention to the fact that pregnant women were consuming it. Since most toxins pass through the placental barrier, the fetus absorbs them as well.

In the United States, there are great specialists working on this issue, including Dr. Blaylock, Dr. H-J Roberts, Dr. Schwartz and many others. Dr. Reif-Lehrer (Harvard) and Dr. John Olney (Washington) have been conducting animal studies on this substance for nearly 20 years. All agree that this substance should at least be banned for children and pregnant women, that ADIs (which are currently not determined) should be minimal, or even that this killer substance should be banned altogether.

Their conclusions are always the same: sodium mono glutamate and its derivatives can cause.
Health problems of endless varieties: fibromyalgia, autoimmune diseases , cancers, Alzheimer, autism, etc.

It is certain that in children, these molecules are the cause or may in any case aggravate or contribute to behavioral disorders.

It is interesting to note that studies in the United States show that 100% of schizophrenics are gluten intolerant. Coincidence? The "glu-" root of gluten is the same as the root of... glutamate!
