Let's talk about gluten! Yes, this gluten is controversial, but why is it so much in the news? Simply because it destroys, damages and makes many people suffer. Many people, to this day, are allergic to gluten and don't even know it.

Unlike our ancestors who ate cereals prepared with noble and ancient wheat, the wheat of our current generations has totally mutated into a completely modified product. In order to make money again and again, industrialists have proposed to the consumer more and more processed products so that they consume more and more. The lure of gain is there: to harm the final consumer even if it means destroying his health.
While wheat and corn are the two cereals that have been most modified by man for generations, there are other cereals that have remained intact, such as rice, for example, and others that do not contain gluten, such as buckwheat, formerly known as buckwheat, quinoa, chickpea, soya, chestnut or amaranth. Most of these cereals are available in flour, allowing you to make your own breads or pastries.
For a good homemade bread, have fun mixing different flours like these for example:
- Chickpeas / Rice flour / Potato starch
- Rice flour / Tapioca flour / Potato starch
However, it is important to know that if you prepare a bread with a gluten free flour, think also about the yeast....Replace it for sourdough, otherwise the process is useless since the yeast is composed of gluten.
Finally, avoid industrial products labelled "gluten-free". Indeed, the latter are not very interesting because of the addition of sugars or fats to make up for the lack of gluten. These additions are not recommended for a healthy diet.
